Recipes from Old Cookbooks: Put The Un In Cooking Fun with 7up The Uncola


"Un in Cooking? That's Right...When a recipe calls for a liquid, use sparkling 7up, The Uncola!" That is the basis of this recipe book published in 1969 by the Seven-Up Co. of St. Louis, Missouri.

The booklet features fourteen pages of recipes that demand you use 7up instead of whatever sane product you would use. There are recipes for cocktails (of the non-alcoholic variety) that features a crazy cutting board man with a knife for a forehead.



Dips, Vegetables, Salads, Breads, Cookies, Cakes, Desserts and pies all have a recipes featuring the uncola. The pie section has an illustration that kind of baffles me.


I am not sure if the pieman has the pies made already and all we have to do is track him down or if we, ourselves, are the pieman and need these recipes to prove our piemanliness.
The recipe for this week is from the weirdly named "From...Hoof Feather & Fin" section

SALMON LOAF WITH VEGETABLE-CHEESE SAUCE
1 (one lb.) can salmon
1 cup 7UP
3/4 cup dry bread crumbs
1 egg
1/2 cup sour cream
2 tbsp. chopped onion
2 tbsp. chopped green pepper
1 tbsp. lemon juice
1/3 cup melted butter or margarine
1/2 tsp. salt

Drain salmon and remove skin and bones. Flake salmon into small pieces. Add remaining ingredients; mix well. Spoon into 9 X 5-inch loaf pan and pack firmly. Bake in 350° F. oven for 50 to 60 minutes. While salmon loaf is baking, prepare sauce.
